Instructions:
For the Potato Filling (Vada): Heat oil in a pan. Add mustard seeds, let them splutter. Add asafoetida, chopped green chilies, grated ginger, and curry leaves. Sauté for a minute. Add turmeric powder and mashed potatoes. Mix well and sauté for 2-3 minutes. Season with salt and continue to cook for another 2-3 minutes until the mixture is well combined. Set aside to cool. For the Gram Flour Batter: In a bowl, mix gram flour, red chili powder, baking soda, and salt. Gradually add water to make a smooth batter with a medium consistency. Ensure there are no lumps. Assembling and Frying Vada: Take a portion of the potato mixture and shape it into a round or oval patty. Heat oil in a pan for deep frying. Dip the potato patty into the gram flour batter, ensuring it is well coated. Carefully place the coated patty into the hot oil and fry until golden brown.
